Additionally, to Botrini’s and Etrusco, two of the most historic restaurants in Greece owned by Ettore Botrini, our team operate some of the most successful restaurants of the country. Selene, one of the most significant restaurants in Greece, in 2022, just one year after being operated by our team as Selene by Ettore Botrini, won the Restaurant of the Year award by FNL, a prestigious culinary guide. We currently hold successful partnerships with world-class hotels and resorts such as One&Only Aesthesis, Katikies, Four Seasons Cyprus, and Ikos orchestrating a wide range of Food & Beverage operations from fine dining to casual establishments. Our notable cooperation with La Pasteria upgraded the restaurant chain’s gastronomic offering while establishing it as one of the most recognizable restaurant brands in Greece.

Antonis Floros

Managing Director

Botrinis Restaurant-

Antonis Floros has an extensive range of expertise in the food industry. As a front- line executive for the Vivartia Group of Companies for 20 years, he has acquired a wide range of skills in evaluating, controlling, and restructuring restaurants, effectively managing staff, and ensuring operational success.

Some of his main accomplishments include the successful designing and launching of 15 new La Pasteria restaurants (2003 – 2013) and his successful tenure as a Maritime Activities Manager of Vivartia in charge of monitoring the operations of all onboard Food & Beverage Outlets (2015 – 2019).

He has been Ettore Botrini’s trusted associate for decades and the General Manager of Ettore Botrini Restaurants and Consulting Services since 2020.

Vassilis Economidis

Director of Operations

Botrinis Restaurant-

Vassilis Economidis specializes in Food & Beverage Management which he has practiced in prominent Michelin star-rated restaurants, iconic 5-star hotels and in cities such as London, Athens, and Copenhagen.

He has also worked as a college professor focusing on the fields of Tourism and Hospitality. Deeply passionate about gastronomy, he has been researching it from an academic perspective and traveling the globe in an endless exploration of its diverse gastronomic cultures.

He has a Master’s degree in Marketing Communications, and extensive studies on hospitality and wine (WSET level 3). He is currently the Director of Operations for the restaurants owned and operated by Ettore Botrini.
